Sizzling with 6: Highlander Seared Cod, Roasted Potatoes, Jasmine Rice, and White Wine Cream Sauce

Recipe Name: Highlander Roasted Potatoes

Ingredients

Red Potatoes 20 lbs.
Garlic, minced 3 oz.
Vegetable Oil 2 cups
Salt 2 tablespoons
Pepper 1 tablespoon
Rosemary, dried 1 tablespoon
Oregano, dried 1 tablespoon
Thyme, dried 1 tablespoon
Butter 1 lb.

Procedure: 

Cut potatoes into bite size pieces. Mix oil, garlic, salt, pepper, and all dried spices. Toss potatoes in spice mixture. Layer potatoes on a sheet pan. Bake at 350 until potatoes start to brown and are cooked through (45 minutes). Remove from oven and store in a proper container.

Ingredients

Butter 1 tablespoon
Olive Oil 1 tablespoon
Minced Garlic 1 oz.
Jasmine Rice 1 cup
Chicken Broth 2 cups
Parsley, chopped 1 teaspoon
Carrots, chopped 1 tablespoon
Celery, chopped 1 tablespoon
Onions, chopped 1 tablespoon

Procedure:

In a saucepan over medium heat combine butter and olive oil. Once butter has melted add garlic, carrots, celery, and onions and cook for one minute. Stir in rice, cook until rice becomes slightly translucent. Stirring occasionally to make sure the rice doesn't stick to the bottom of the pan for about four minutes. Rice may slightly brown. Stir in chicken broth, bring to a boil. Reduce to medium-low. Cover and let cook 20-25 minutes. Carefully remove the lid and fluff rice.

Ingredients

Heavy Cream 1 quart
White Wine 1 quart
Flour 1/4 cup
Salt 1 tablespoon
Parsley, dried 1 tablespoon

Procedure:

Mix all ingredients will and bring to a boil. Reduce heat to low and simmer until thickened.

Ingredients

Cod Filet 2, 8 oz. each
Roasted Vegetables 3 oz.
Jasmine Rice Pilaf 4 oz.
Olive Oil Blend 1 tablespoon
Minced Garlic 1 teaspoon
Salt & Pepper to taste 
Cooking Spray as needed
White Wine Cream Sauce 2 oz.

Procedure:

Cut cod filet lengthwise into four 2 oz. pieces. Coat in oil, minced garlic, and a touch of salt and pepper. Spray a hot pan with cooking spray and place cod. Sear on all sides until a crust has formed. Place Jasmine Rice Pilaf in the center of the plate. Surround with roasted vegetables. Place cod in pyramid pattern leaning on rice. Top with White Wine Cream Sauce.
