WICHITA FALLS, Texas (TNN) - The News Channel 6 City Guide is a segment that shines a spotlight on local businesses, events, and nonprofits across Texoma. In this episode, we’re giving you a behind-the-scenes look as local restauranteurs and chocolatiers prepare for the 2021 Chocolate Soirée. It’s an annual fundraiser that supports Christ Academy.
The event is being held virtually this year due to COVID-19. But there is still plenty of delectable fun to be had. We caught up with Shawn Sharif, general manager at Fox Hill Restaurant, and two of his chefs as they prepare their chocolate dish for the annual event. Taking part in the Chocolate Soirée is nothing new for Shawn and his crew.
“We did [participate] for the last two years,” Sharif said. “One year, we became number two for the best creation.”
This year, they are bringing together a traditional dessert with a Fox Hill Restaurant flare. While the format of the event has changed, preparing for this year’s Chocolate Soirée has been fun.
“We’re doing a cannoli. We’re trying to stay as traditional as possible but also putting a little bit of our own spin on it,” Hope Stockwell, pastry chef at Fox Hill Restaurant said. “We’re doing a white chocolate mousse inside of a cannoli shell. It’s going to have the pistachios, which are kind of the staple for the cannoli, as well as a white chocolate and dark chocolate ganache drizzled over the top and toasted almonds.”
