WICHITA FALLS, Texas (TNN) - The News Channel 6 City Guide is a segment that shines a spotlight on local businesses, events, and nonprofits across Texoma. In this episode, we’re giving you a behind-the-scenes look as local restauranteurs and chocolatiers prepare for the 2021 Chocolate Soirée.
It’s an annual fundraiser that supports Christ Academy. The event is being held virtually this year due to COVID-19. But there is still plenty of delectable fun to be had.
We caught up with Tagan Couch, owner of the Gypsy Kit in downtown Wichita Falls as she and her team of talented chefs prepare for the annual event.
“I have most definitely participated in Chocolate Soirée every single year that they’ve had it. Christ Academy is very near and dear to my heart because my daughter went to school there,” Couch said.
Tagan is a Chocolate Soirée veteran. With the changes made to the event’s format, she had to take things back to the drawing board for this year’s dish.
“Most years we try to do something savory. Because I am most definitely more of a trained chef than I am of a pastry chef. I always like to do something a little outside the box,” Couch said.
They teamed up with Fresh Donut on Fairway Boulevard and are using their long johns for the dish. They are filled with a hot chocolate pastry cream. The donut will then be topped with a chili de Arbol ganache. A chili powder and hot chocolate whipped cream will be put on top of that. The grand finale will be a piece of bacon that was soaked and baked in a hot cocoa chili powder mixture and butter. Yummy!
