Beer Onions

Onions, Julienne - 10 lbs.
Vegetable Oil - 1 cup
Garlic, Minced - 3 tablespoons
Salt - 2 tablespoons
Pepper - 1 tablespoon
Beer - 16 oz.

Procedure: Heat oil in large pan, add onions, garlic, salt, and pepper. Cook until onions start to caramelize. Add beer and reduce heat until there is minimal liquid.

Black Pepper & Brown Sugar Bacon

Thick Cut Bacon - 5 lbs.
Brown Sugar - 1 cup
Course Black Pepper - 3 tablespoons

Procedure: Lay bacon on a baking sheet. Sprinkle the brown sugar and then black pepper evenly over the bacon. Cook at 350 degrees for 15 minutes or until the bacon is crispy.

Beer Cheese Sauce

American Cheese, special melt, cubed - 1 block (5 lbs.)
Butter - 4 lbs.
Dark Beer - 1 cup
Salt - to taste
Pepper - to taste

Procedure: Combine cheese, butter, and beer in a sauce pot on low heat and stir until melted. Add salt and pepper to taste.
